In a large mixing bowl combine, the Zero Sugar Yellow cake mix, creamy peanut butter (I use Adam’s No-Stir Natural Peanut butter as there are no sugars added, and it’s the BEST!), eggs, and oil.
Mix the ingredients by hand until well combined. The dough will be thick and slightly sticky. I use a cookie scoop to get even cookies, drop the dough into my hand, and roll it into a ball. Place the formed balls on the baking sheet, leaving enough space between each cookie.
Gently flatten each cookie with a fork, creating the classic crisscross pattern. Bake for 12-15 minutes in your 350-degree pre-heated oven. The cookies will be soft when you take them out. Allow them to cool directly on the baking sheet for about 3-5 minutes before transferring them to a wire rack to cool completely. The cookies will firm up as they cool.
