- 1 Zero Sugar Yellow Cake Mix Or Cake Mix of your Choice
- 1 Cup Creamy Peanut Butter No Sugar Added - if going for low Sugar
- 1/2 Cup Oil
- 2 Lg Eggs
Preheat your oven to 350 degrees and line baking sheet with parchment paper or use a non-stick pan.
In a large mixing bowl combine, the zero sugar yellow cake mix, creamy peanut butter, eggs and oil.
Mix ingredients by hand until will combined. The dough will be thick and slightly sticky.
Using a Cookie Scoop or spoon, drop the dough into your hand and roll into a ball. Place the formed balls on the baking sheet, leaving enough space between each cookie for pressing.
Gently flatten/press each cookie with a fork, creating the classic crisscross pattern. Bake for 12-15 minutes in your 350 degree pre-heated oven.
Allow the cookies to rest on the baking sheet for about 3-5 minutes once removed from the oven to set before removing to a wire rack to cool.
Allow the Cookies to cool on the baking sheet for 3-5 minutes before transferring them to a wire rack.
Cookies will firm up when they cool completely.
