Quick and Easy Keto Chili is perfect for weeknight dinners. This chili is ready to serve in under an hour. Actually this recipe can be on the table in as little as 45 minutes. Quick and Easy Chili is favorite in our house on the crisp days of fall and chilly days of winter. I’ve lost count of how many times I have been asked for this recipe by friends and family who have had it. Finally, I am sharing it here and I’m pretty excited! Quick and Easy Keto Chili is full of flavor and is both hearty and healthy thanks to the cauliflower rice! And for those of you who are not a fan of cauliflower, you know who you are…. I challenge you to give this one a try!
How to make Quick and Easy Keto Chili…
Start by cooking you ground beef and ground sausage in a heavy bottom pan. I use an enameled cast iron dutch oven for this. Cast iron maintains an even heat making it perfect for Soups, Chili and Stews. You can find one like mine here.
Once the meat has browned add your onion, green pepper and garlic to the mixture and cook for 3-5 minutes. (I use this awesome meat chopper to brown my ground meats! It works amazing!)
Next add your diced tomatoes, (yes I use canned for this – what is easier than opening a can!) chili powder and cumin. Bring you chili to a simmer and allow to cook for about 20 minutes.
Finally add your pre-riced cauliflower. So easy! Allow it to cook an additional 10 minutes and this Quick and Easy Keto Chili is ready to serve up!
Tips and Tricks….
Serve up your Quick and Easy Keto Chili with optional toppings of cheddar cheese, sour cream and onions or chives!
Canned Diced tomatoes are perfect for Chili, and when simmered in chili you cant even tell the difference between canned or fresh tomatoes!
While you can use fresh cauliflower in this recipe by pulsing raw cauliflower florets in a food processor, frozen cauliflower rice saves time and a lot of mess! If you make a mess in the kitchen these microfiber dishcloths work amazing for all types of messes! I use them every day! They even have fun colors!!!
When Green peppers are on sale or plentiful in the garden I freeze them. Green peppers freeze well and work great when are going to use them in a recipe where they are cooked. I even dice some of them up for this chili. Add them right to the pot frozen, they thaw quickly.

Quick and Easy Keto Chili
Ingredients
- 1 lb Ground Beef
- 1 lb Ground Sausage
- 2 Green Peppers
- 1 Onion (diced)
- 2 cloves Garlic (minced)
- 28 oz Can diced tomatoes
- 2 tbsp Chili Powder Sometimes I use 3 tbsp – start with 2 Tbsp, and add more to taste.
- 1 tsp Cumin Powder
- 2 bags Cauliflower Rice (10 oz bags)
- Salt and Pepper to taste
Instructions
- Cook Ground Beef and Sausage until browned
- Add Diced Onion, Bell Pepper and Garlic, allow to cook for another 3-5 minutes
- Next add the Diced Tomatoes, chili powder and cumin. Bring to a simmer and cook for 20 minutes.
- Finally add your Cauliflower Rice, and cook for an additional 10 minutes.
- Serve with your favorite chili toppings like cheddar cheese, sour cream and onion. (option)
