Use your favorite vegetables in Quick and Easy Smoked Salmon Pot Pie. In a hurry I grabbed some canned Pea’s & Corn and diced up some Carrots in my most recent version, however the following are some good vegetable options to consider:
Vegetable Ideas:
- Potatoes: Diced potatoes add a hearty and satisfying element to the pot pie, providing a starchy component that complements the smoked salmon.
- Carrots: Carrots bring sweetness and vibrant color to the filling. Dice them for a manageable bite-size in the pot pie.
- Celery: Chopped celery provides a refreshing, crunchy texture and a mild, savory flavor that pairs well with smoked salmon.
- Onions: Finely chopped onions contribute a savory depth and aromatic quality to the filling. You can use yellow, white, or red onions based on your preference.
- Peas: Sweet peas add a burst of sweetness and a pop of color. Consider adding them towards the end of cooking to maintain their vibrant green color.
- Leeks: Sliced leeks offer a mild onion flavor and a slightly sweet taste. They add a subtle complexity to the filling.
- Mushrooms: Sautéed mushrooms can bring an earthy richness to the pot pie. Choose varieties like cremini or shiitake for added depth of flavor.
- Spinach or Kale: For a touch of green, consider adding fresh spinach or kale. Toss them in during the last few minutes of cooking to wilt them slightly.
- Bell Peppers: Chopped bell peppers provide sweetness and color contrast. Opt for a mix of red, yellow, and green peppers for visual appeal.
- Asparagus: If in season, asparagus can add a delightful crunch and a hint of earthiness. Chop them into bite-sized pieces.
