Keto Chocolate Covered Strawberries

Ingredients

  • 2 bags Sugar Free/Keto Chocolate I use Lily's Milk and White Chocolates
  • 1-4 tsp Coconut Oil unrefined Per 3/4 cup Chocolate Chips
  • 24 med Strawberries About a 1 lb package

Instructions

  • Wash and dry your strawberries.  You will actually need to dry off each strawberry then place them on paper towels to dry more!  This is a critical step to creating beautiful Keto Chocolate Covered Strawberries.
  • Once the strawberries are dry you can begin melting the chocolate.  For every ¾ cup of chocolate chips add 1 tsp of unrefined coconut oil to a measuring cup or bowl. 
  • Microwave starting for 30 seconds, remove the chocolate and stir.  Continue to microwave the chocolate in 15 second intervals, stirring between each interval until melted and smooth.
  • Once Chocolate is melted set aside to cool slightly and prepare your baking pan.
  • Line baking sheet with parchment paper, wax paper or silicone baking sheet. (Do not use foil, strawberries will stick.)
  • Now for the fun part!  Dipping the strawberries.  I put  toothpicks in the tops to help hold onto them, this is optional but seems to make it a bit easier.  Pull back  the green tops and dip the berries into the chocolate.  Turn them to coat fully, then let the excess drip off, place them on the lined baking sheet and chill for at least an hour!

Notes

Water is the Enemy of Melted Chocolate.  You must dry off each strawberry after washing, then place on a paper towel and let air dry a little longer. Water causes chocolate to seize even the smallest amount and will quickly form a gritty rough paste feel to your chocolate.  Additionally the chocolate will not stick to the strawberries, so don’t skip this very important step.  
Can you burn the Chocolate? Yes, if you get the chocolate too hot, it can separate into burned cocoa particles and become thick and muddy. Overheated chocolate will also lose the silky shine of mleted chocolate.  
It's best to use room temperature strawberries because the chocolate will harden too fast on cold strawberries.  If your strawberries are cold from the fridge and your in a hurry, wash them in slightly warm water to bring the berries up to room temperature.  Make sure to dry them well! 
Keto Chocolate Covered Strawberries are best consumed within 2-3 days.  I do not recommend freezing as this causes the strawberry to get mushy.
After the chocolate is set you can keep your strawberries in a cool place, they don’t need to be refrigerated.   If you refrigerate your berries don't leave the strawberries at room temperature for a long time after being refrigerated, because they will start to sweat.
We add coconut oil to the chocolate when melting.  This help the chocolate melt a little easier and hardens a little faster and thicker.  The coconut oil make the chocolate act like a chocolate shell.  While it is not essential it does make the chocolate easier to work with and the small amount does not change the flavor at all.  We recommend it!
