Keto Amish Whoopie Pies

Ingredients

Cake Cookies

  • 1 1/2 cups Super Fine Almond Flour
  • 1/4 cup Cocoa Powder
  • 2 tbsp Cocoa Powder Total: 1/4 cup plus 2 tbsp.
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/3 cup Heavy whipping Cream
  • 3 LG Eggs
  • 1/3 cup Sweetener of choice Allulose or Swerve work great!
  • 1 1/2 tsp Vanilla Extract

Frosting/Filling

  • 1 stick Softened Butter equivalent to 1/2 cup
  • 2 cups Powdered Sweetener Powdered Allulose or Swerve work well.
  • 1 tsp Vanilla Extract
  • 3 tbsp Heavy Whipping Cream

Instructions

  • Preheat oven to 350°
  • Combine Cake Cookie Ingredients into a bowl and mix with hand mixer
  • Drop about 2 tbsp of batter onto a non-stick cookie sheet or parchment lined sheet.
  • Batter should spread a bit and that is good. If you batter is not spreading see notes below.
  • Bake Cookies for 10-12 minutes at 350° or until they spring back to the touch.
  • Remove cookies from pan and place on cooling rack, ensure the cookies are fully cooled before frosting.
  • In a bowl combine frosting ingredients. Make sure the butter is soft not melted.
  • Combine with a hand mixer until combined and fluffy.
  • Once cookies are completely cool, pipe or spread icing onto one of the cakes (flat side) and top with another cookie.
  • Enjoy!

Notes

3.5 Net Carbs per Whoopie Pie!
Ensure your cake batter is not too thick, whoopie pies should be wider than they are high.  If you are having trouble getting your batter to spread out try adding by the tablespoon heavy whipping cream or water until the consistency of the batter spreads out to about 1 ½- 2 inch cookies. 
Try Allulose as a Powdered sweetener in this recipe - especially the frosting. Allulose is a natural powdered sugar alternative that tastes just like sugar!  It has zero calories, zero net carbs and zero glycemic index.  Its diabetic friendly and won’t spike blood sugar.  While Swerve powdered sweetener is a great option, it does leave a bit of a cooling aftertaste in the frosting. 
If you don’t have powdered sweetener alternative you can use a coffee grinder to make your own! But it is critical you use powdered sweetener in the frosting.
The frosting for this recipe is not just for Keto Amish Whoopie pies, this frosting works well for cupcakes and cakes as well.  While this recipe makes more icing than you will need you can refrigerate it for later or like me make a double batch of Keto Amish Whoopie pie cakes and freeze some for later!
