Notes

You can use either fresh or canned lobster meat if you’re short on time.  In my opinion fresh lobster is always worth it if you can get it.  I know lobster can be pricey but keep an eye out for sales!  The rich, buttery flavor of fresh lobster really shines in this recipe.
The longer you let the dip sit and chill, the more the flavors meld together.  This is one of those dishes that tastes even better the next day.  So, if you’re making it for a gathering, try to prepare it in advance and let it hang out in the fridge for a while.  Trust me, it’s worth the wait.
Don’t skip the horseradish, it is one of the stars of this dip!  It adds a subtle kick that enhances the sweet and delicate flavor of the lobster without overpowering it. Horseradish brings out a brightness that cuts through the richness of the creamy base, creating a perfect balance of flavors. If you haven’t tried lobster with horseradish before, you’re in for a treat.
