Keto/Low Carb Mozzarella Cheese Sticks
Crispy on the outside, Cheese Gooey Cheese on the inside! These are the perfect appetizer or snack!

- 8-10 String Cheese Sticks
- 3/4 Cup Almond Flour
- 1/3 Cup Parmesan Cheese
- 2 eggs
- 1 tsp Parsley optional
- Oil for frying
Cut your String Cheese Sticks in half.
Prepare a Breading Station - 2 Bowls. First bowl put the eggs and whisk them with a fork. Second bowl combine the Almond flour, Parmesan Cheese and Parsley.
Take your cut (half of string cheese) and dip it in the egg mixture, roll in the breading (Almond flour, parm cheese and parsley) then back into the egg wash and a final roll in the breading.
Place breaded cheese sticks on a parchment lined plate or pan.
Freeze for a minimum of 45 minutes but preferably 90 minutes. This prevents the cheese from melting out during frying.
Add oil to your frying pan (I use cast iron skillet) just about a 1/4 to half inch you don't need much.
Add a few cheese sticks at a time and turn them as they start to brown.
When they are golden on the outside move them to a cooking rack, this will keep them crispy while they cool.

Freezing it the most critical part of this recipe, if you don't allow them to freeze a bit you will have cheese melting out of the breading and mess in the pan.
When pulling them out of the breading grab them by the ends to prevent the breading from coming off.
While frying turn them with tongs. I use this one!
