Low Carb Sausage Gravy is one of my favorite comfort foods. Its rich and creamy just like the diner favorite you come to know and love.
Biscuits and gravy is a staple menu item at just about any diner. I love a good family or local diner, and try to find the favorites when we visit a new area. (where the locals go!). Traditionally served on biscuits, I like to serve this on a Simple Chaffle (recipe coming soon). I am fairly new to Chaffels and found this one is simple enough to use as a bread or biscuit. Low Carb Sausage Gravy is keto and low carb friendly, it does not use flour like the traditional version for thickening. Xantham gum is such a great ingredient for any Keto/Low Carb Kitchen. It is reasonably priced you can purchase it on Amazon here. You can also find Xantham gum as most grocery stores. A Little goes a long way, you don’t need much for any single recipe.
Making the Gravy!
This recipe is super simple, and uses just a few ingredients. Brown your sausage, I personally like to remove the sausage from the pan once it is fully cooked. This frees up my pan to ensure the creamy gravy is combined properly but its my preference. In the same pan add your broth. The type of broth does not matter, I usually have chicken broth on hand so I used that. Beef broth would work as well. Use this the broth in your heated pan to get the delicious sausage bits from the bottom, that’s flavor!
Then you will add the remaining ingredients. Heavy whipping cream, butter, xantham gum, salt and pepper. I use a ¼ tsp of salt to start, you may need more if your using unsalted butter. You can always add more salt at the end based on your tastes. I think pepper is a key ingredient in a great Sausage gravy. I use 1 full tsp, sometimes heaping in mine. Whisk all of these ingredients together and bring to a simmer to allow it to thicken up. If you don’t have Xantham gum or prefer not to use it, check tips and tricks below. Finally add your sausage. Stir to combine and you are ready to serve this creamy, comforting low carb sausage gravy.
Tips and Tricks…
I like to use a heavy bottom pan, this allows for even heat preventing the rich creamy sauce from burning. I have a lodge cast iron enameled dutch oven (find it here) or at your local big box store.
This recipe calls for Xantham gum. If you decide not to use this ingredient you can add 2 oz of cream cheese. Simmer the gravy until you reach the consistency you like. This process will take time and patience – I struggle with patience, lol
Add additional salt and pepper at the end. I like a lot of pepper in my sausage gravy. Start with 1 tsp pepper and ¼ tsp salt and add more based on your preference.

Low Carb Sausage Gravy
Ingredients
- 1 lb Sausage I use Jimmy Dean Regular
- 1 1/2 cup Heavy Whipping Cream
- 1 cup Chicken or Beef Broth
- 2 tbsp Butter
- 1/2 tsp Xantham Gum
- 1/4 tsp salt
- 1 tsp pepper
Instructions
- Cook ground sausage, remove from the pan once fully cooked and set aside
- Add Broth to warm pan and work it around to remove the leftover bits of sausage sticking to the pan (flavor!!!)
- Add remaining ingredients (except the sausage) and whisk to combine
- Bring gravy mixture to a simmer and allow to thicken.
- Add your sausage to the gravy mix and stir to combine, taste and add additional salt and pepper as desired.
- Serve on your favorite low carb biscuit or Chaffel.
