Sloppy Joe’s remind me of my childhood. This was something I loved growing up and still do! Keto Sloppy Joes are just like the original Sloppy Joe. A loose meat sandwich simmered in a sweet and tangy tomato based sauce. This recipe I use Swerve Brown Sugar (you can buy it here). Ketchup is another common ingredient, but this recipe uses tomato paste and red wine vinegar, reducing the carbs significantly.
The Meat…
Keto Sloppy Joes can really be made with just about any type of loose meat. Ground turkey, a blend of ground beef and pork, or traditionally with ground beef. I make this frequently with ground Elk. If you have a hunter in your life and venison is in your freezer try this recipe with ground venison, its delicious!

I love the colors of peppers, so I use Yellow and Red Bell Peppers in this Keto Sloppy Joes recipe. You can absolutely use whatever bell pepper is are your favorite including green pepper a mix of different colors, or all of one kind. This recipe only calls for a total 1/2 cup of bell pepper. To save the left over peppers, I clean the whole pepper of the seeds and membranes and freeze in a zip top bag. (That is if my kids don’t eat the other half before I have the chance, they love bell peppers!) Using a previously frozen bell pepper works great in cooked dishes. I don’t chop them before freezing, as they tend to freeze together in a lump. Bell Peppers tend to thaw out quickly and you can chop them while still slightly frozen.
The “Bun”…
I use a modified fathead dough in place of the traditional hamburger roll you might associate with Sloppy Joes. You can find fathead dough recipes all over the internet. For this version I add Psyllium husk powder and baking powder to give it a bread like consistency. (Find the Fat Head Burger Bun recipe here)
This Keto Sloppy Joe recipe is full of flavor and easy to make. It also uses basic staple ingredients. I thought this was a fitting recipe right now, because as I type this up we are on “Stay at Home Orders” for Covid-19 pandemic. If you have the ability, stay home and use what you have. Bell Peppers may not be something you have on hand. While they give it flavor you can make this recipe without them, or if you have some dehydrated bell peppers (buy online here) or Bell Pepper flakes (buy online here) in your pantry use those!

Keto Sloppy Joes
Ingredients
- 1 lb Ground Beef
- 1/4 cup Yellow Bell Pepper or any Bell Pepper of your choice
- 1/4 cup Red Bell Pepper
- 1/2 cup Onion
- 1 TBS Red wine Vinegar
- 2 tsp Worcestershire sauce
- 4 oz tomato paste
- 1 TBS yellow mustard (prepared)
- 2 TBS Brown sugar substitute I use Swerve
Instructions
- Chop your peppers and onions, and add them to a large skillet with the ground beef.
- Cook the ground beef and onion/pepper mixture
- Add the remaining ingredients and simmer for 5-10 minutes.
