Inspiration…
Our little town has a General Store. It is the kind of place that takes you back in time. This might be because the General Store has old wooden floors that are painted a dark barn red and there are horse tie up rings out front along the sidewalk. The staff know you when you walk in the door! I sure do love small town/rural living. For our kids the biggest attraction at the general store is the hot deli food. The Deli food is displayed in a glass warming case, behind the counter. Corndogs, German Sausage on a stick, Jo Jo’s (fried potato wedges) and Chicken Strips are a few of their favorites!
My inspiration behind Keto Chicken Strips was the General Store. They have to be crispy, they have to be moist and most of all they have to be Kid approved! These Keto Chicken Strips Recipe check all of the boxes. You wouldn’t even know they are low Carb. I actually preferred Keto Chicken Strips over traditional.
The Basics….
Keto Fried Chicken is super easy with just 5 total ingredients. Your will need to set up a small assembly line of 2 bowls. One bowl for the whisked eggs, the other bowl for your coating of Almond Flour, Parmesan cheese and seasonings. Your also going to need a good heavy bottom skillet with about 1/2 inch of oil. A heavy bottom pan is essential to keep the oil temperature consistent. I use a Cast Iron Pan like this one for a nice golden crispy exterior. Dip, Coat, and Fry!!! Its that simple!
Tips and Tricks…
Because breading stations generally start with flour, and we are not using any flour in this recipe, I recommend drying your chicken off to remove any excess moisture. Paper towels are your friend! This will allow the egg to stick to the chicken and the crust to stay in place during frying.
I bread the chicken as I go, however this is my personal preference. You can bread them all before frying, or prep Keto Chicken Strips in advance and refrigerate them until your ready!
You need about a 1/2 inch of oil in the bottom of the heavy bottom pan, and flip as your go! Also, watch your heat, if the pan gets too hot the almond meal will burn!

Keto Chicken Strips
Ingredients
- 3/4 cup Almond Flour
- 1/2 cup Grated Parmesan Cheese (from the can)
- 2 Eggs
- 2 Chicken Breast Halves
- Salt and Pepper
- Oil for frying
Instructions
- Clean the Chicken breast and slice into Chicken Strips
- Create a breading station of 2 whisked eggs and bowl with Almond flour and Parmesan grated cheese (season with salt and pepper)
- Dry your chicken strips with a paper towel
- Dip your chicken strips into the egg, then roll in the breading mixture
- Place the chicken into your heavy bottom pan with preheated oil. Turn the chicken as it browns.
- Once chicken has reached an internal temperature of 165 degrees its done. More to a rack to allow any excess oil to drip off.
- Serve while hot!
