Coconut Lime Cauliflower “Rice” is a slightly sweet and savory side dish the whole family will love. It is Keto Friendly, Gluten Free, and Dairy Free! Did I mention delicious, this side is so delicious I could eat it every day? I love that just a few ingredients can transform basic cauliflower rice into an amazing side dish.
I personally struggle with side dishes when it comes to Keto cooking, generally it is a protein and a simple vegetable side at our house. Sometimes I want something more than broccoli and butter or a salad. I am always looking for a new side dish to jazz up our weeknight meal routine. Coconut Lime Cauliflower “Rice” is just the thing!
The Coconut milk adds mild sweetness and creaminess to the rice, while the lime transforms it into a bright and pleasantly light side dish. Coconut Lime Cauliflower “Rice” is an ideal accompaniment to spicy foods or even your favorite grilled dishes. (Its grilling season after all!) How to make it…
Coconut Lime Cauliflower “Rice” could not be simpler to make!
You can get all crazy and make your own Cauliflower rice, but I go for the frozen pre-made Cauliflower rice to keep things simple. If you are interested in making your own cauliflower rice see the Tricks and Tips below for how to!
First Prepare your Cauliflower rice (or rip those bags of frozen cauliflower open, my preferred method, LOL) Second, dice up one small onion, and begin heating up 2 Tbsp olive oil in your pan. I use an enameled cast iron dutch oven, it works great with minimal sticking and even heat. You can purchase one like mine here. I use this pan almost every day. They come in multiple colors!
Add the onions to the pan and cook 2-3 minutes or until they are tender. Stir in the garlic and cauliflower and cook for an additional 2-3 minutes.
Add the coconut milk (canned kind, unsweetened) and simmer for 10 minutes or until all of the coconut milk is cooked down and absorbed. Finally remove from the heat and stir in the zest and juice of one lime. Add some salt and pepper to taste, and fresh cilantro. (optional)
Serve immediately, think Grilled Fish, Shrimp Tacos or my amazing Chicken Satay. (recipe coming soon!) This “rice” also holds up well in the fridge, I reheat it in the microwave and make a light lunch out of it.
Tips and Tricks…
Real, good-quality coconut milk is an essential ingredient in this Easy Coconut Lime Rice Recipe – be sure to buy the canned variety not the coconut milk beverage.
Goya Coconut Milk, No Sugar AddedA good non stick pan or enameled cast iron dutch oven is recommended. You want to frequently stir while simmering with the coconut milk to keep it from burning.
As promised how to make “Fresh” Cauliflower Rice. For this recipe you will want one head of cauliflower. Clean and cut the cauliflower head into florets. Next add the florets to the food processor and Pulse, until the cauliflower resembles rice. Don’t overflow the processor, do it in batches for the perfect “rice”. The pulse button is your friend. This is not the time to turn on the blender and look away, the cauliflower will turn to mush.

Ingredients
- 2 10 oz bags Cauliflower Rice or Head of one cauliflower (riced, see below)
- 2 tbsp Olive oil
- 1 onion chopped
- 3 garlic cloves
- 1 can Coconut Milk
- 1 lime Zest and Juice
Instructions

- Remove from heat and stir in the zest and juice of one lime. Add some salt and pepper to taste and fresh cilantro (option, cilantro)
- Serve immediately.
