Bacon and Gruyere Egg Bites are soft, pillowy, and protein-packed bites that I often describe as Egg Bon Bons. (Melt in your mouth delicious) Bacon and Gruyere egg bites are made easy thanks to the instant pot and silicone egg molds. You can find egg molds reasonably priced here. If you’re a fan of Starbucks sous vide egg bites then this is your recipe, a copycat of Starbucks Bacons & Gruyere Sous vide egg bites, and way less expensive. Do you enjoy meal prepping? Bacon and Gruyere egg bites are perfect for those who enjoy meal prepping because egg bites reheat in seconds for a perfectly keto and low-carb breakfast. Bacon and Gruyere Egg bits can be refrigerated for up to 1 week and can also be frozen. To reheat 30 seconds in the microwave and they will be ready. From frozen reheat for 1 ½ to 2 minutes.
Bacon and Gruyere Cheese are the stars of these egg bites. Gruyere cheese is a harder cheese that melts perfectly. Gruyere has a mild and nutty and slightly sweet flavor very similar to swiss cheese. A great substitution for Gruyere would be Jarlsberg cheese. Milder in flavor, Jarlsberg has a very similar flavor profile to gruyere. A good thick-cut applewood smoked bacon and you have a match made in heaven.
To make egg bites you need an instant pot, food processor, and silicone egg bite molds. You can make all kinds of things in egg bite molds. Mini meatloaves, muffins, and even popsicles, this is one of the best amazon purchases I have made. I plan to share more of these recipes in the future.
How to make Bacon and Gruyere Egg Bites…
Start off by cooking your bacon, drain, and set aside. I cut my bacon before cooking because then I have perfect pieces when completed. If you have already cooked bacon cut it into pieces.
In a food processor add eggs, cottage cheese, and gruyere cheese, and blend until smooth about 30 seconds. Add pre-cooked bacon and pulse a few times to combine.
Brush inside of egg mold with olive oil or cooking spray. Divide the egg bit mixture into the silicone mold cups.
Cover with silicone lid or tightly cover with aluminum foil. Add one cup of water and trivet into the instant pot. Carefully lower the silicone mold into pot. If you want to make a double batch and have two molds? You can stack egg molds on top of each other for double the deliciousness.
Place the lid on the instant pot and on high pressure, set the timer for 10 minutes. Once complete let the pressure come down naturally for 7 -10 minutes. After, release any remaining pressure and remove the egg bites. Finally, and this is the hardest part. Let the egg bites cool for 5 minutes before removing from the molds and enjoying.
Tips and Tricks…
I ladle my egg bit mixture into the egg molds to ensure there is bacon in every bite.
Silicone is naturally non-stick, I suggest using olive oil, coconut oil, or cooking spray in the mold . This allows for an easy release of the egg bites. Using this helps ensure everything is covered.

If you have the egg molds, you can cook/poach them in a pot of water for about 12-20 minutes depending on the size of egg molds you are using. Place about 1-2 inches of water in the pot set your filled and covered egg mold inside. Place the lid on the pot and once the water starts boiling start the timer. If you don’t have egg bite molds, you could always bake them in a silicone cupcake pan but the tops will likely brown up a bit- I’m sure they will still taste great!
