1/4 cupSwerve Granular Sweeteneror sweetener or your choice
1/4cupWater
1tbspLemon Juicefresh preferred
1tspKnox Gelatin (powder)
Instructions
Dice up your strawberries, add water and sugar substitute (I used Swerve) into a pan and bring to a simmer.
Simmer Berries for 2-10 minutes. Depending on how ripe your berries are it will take anywhere from 2-10 minutes for the berries to break down while simmering.
While the berries are simmering in a small bowl mix gelatin and lemon juice and let sit, it will start to gel up.
Once your berries are fully simmered (consistancy you like) add the gelatin/lemon mixture to the berries and continue to simmer an additional 2 minutes. Break my gelatin/lemon mixture up a bit with a spoon before adding it to the simmering berries.
At this point you Jam is done, but it’s hot! Add it to your favorite container and refrigerate.
Notes
If you are using store bought Strawberries I recommend using ripe strawberries, and remove any white sections and cores.You can substitute 2 tablespoons of Chia Seeds if you want to omit the gelatin.Stir constantly while simmering, to keep it from burning.I like some little bits of strawberry in my jam. If you want a smoother consistency you can take your immersion blender to the mix I would let it cool a bit before you attempt this.
