Keto Pizza Chaffles

Equipment

  • Waffle Maker

Ingredients

  • 1 Egg
  • 1 tbsp "heaping tbsp" Almond Flour
  • 1/2 cup Mozzarella Cheese
  • 1 tbsp Grated Parmesan Cheese The kind from the shaker can
  • 1/8 tsp Italian Seasoning
  • 1/4 tsp garlic powder
  • 1/2 tsp baking powder

Instructions

  • Place all ingredients into large mixing bowl and stir until combined.
  • Once combined, add to you waffle maker and cook for approx 2-5 minutes depending on the temperature of your waffle maker and the type of waffle maker you use this time varies.  The Keto Pizza Chaffle should be slightly crisp and golden brown.  Don’t be afraid to open the lid, take a peek and continue cooking if needed. 
  • Remove from Waffle maker and place on a baking sheet.
  • Top with your favorite Pizza toppings - this is the fun part!
  • Bake in a 350 degree oven until toppings are melted and hot!

Notes

If you want extra crunch add some additional cheese to the waffle maker just before adding the Keto Pizza Chaffle batter and a little on top before you close the lid.  Do not omit cheese from the batter, this would be additional cheese.
Turn your oven to Broil for the last few minutes of cooking to get the toppings bubbly and crisp.  
BBQ pizza is a favorite at our house.  Roasted Garlic and Bleu Cheese are great additions to Chicken BBQ Keto Pizza Chaffles.

Ricotta topping is a win for me!  I love this on my pizza.  It gives it a creamy garlicky pop every few bites.  Its simple to make, Ricotta cheese, minced garlic or garlic powder and a little salt and pepper!  Drop it by the spoonful on your pizza for a delicious surprise!
